This is a common catch, the apparent additional layer of muscularis propria is due to folding. You need to be aware of this (look at the mucosa to get some idea of the degree of folding of the tissue), and it will sometimes disappear on deeper levels. This type of artefact can also give the appearance of neuronal hypertrophy if the myenteric plexus is not sectioned accurately.
